The developed snack includes other ingredients such as oats, chia, quinoa, and common binder ingredients. All the quality attributes evaluated were stable over storage and the final recipe was defined as tasty and healthy by a focus group. This new snack reduces food waste and consequently contributes to a circular economy model, simultaneously presenting environmental and economic advantages.
