Ömer Simsek was born in Germany at 07.08.1976. He was graduated from University of Pamukkale, Department of Food Engineering at 2000. He got his master science degree at the same university at 2003. Afterwards, he started to study on bacteriocins of lactic acid bacteria especially increasing the production amount of nisin at Lactococcus lactis. During his pHD he has been in Heksinki University. In 2009, he completed his PhD with the dissertation of "Enhancing Nisin Production at Lactococcus lactis". Since he had his PhD, he has been teaching at University of Pamukkale, Department of Food Engineering as Assist. Prof.Dr. on Food Microbiology, Biotechnology, Starter culture technology. In the same time, he has been leading a research group BIOLAB which is existed at Pamukkale University, Department of Food Engineering. He has already 20 published articles and more than 100 citations.
The main subjects of his studies are bacteriocins of lactic acid bacteria, probiotics, identifications and classification of lactic acid bacteria, genetics of lactic acid bacteria.
