The world population is estimated to exceed over 9 billion by 2050 which will result in a growth in the demand for animal-derived foods with the consequences of unsustainable environmental impacts and resources wastefulness. In the light of these evidences, the production and consumption of insects could be a solution as an alternative and sustainable food. Insects provide a valuable source of high-quality proteins, lipids and minerals. So, new insights on their safety, health benefits and new formats to be delivered as ingredient will boost their consumption and acceptance.
